Serves 3 - 4.
2/3 cup of peanut butter
4 tbsp soy sauce
1 cup water
2 tbsp lime juice
2 cloves garlic
1/2 tbsp chili powder
Some fresh ginger
Handful green beans
1 /2 red bell pepper
Add everything except the vegetables and tofu into a blender and blend.
Press tofu for a good hour and fry some slices in a skillet and remove from pan.
Stir fry vegetables and add contents of blender and mix.
Tip: When stir frying vegetables never use powdered ginger / garlic / chili, or if you don't have anything else wait until the vegetables are cooked to add these, as the powder soaks up the oil and ends up burning.
Add tofu and serve with noodles or rice!
