NACHO MOUNTAIN

I took a fancying to making these, and they turned out unreal so they had to be shared with you! So easy to make.



You need:

1 pack of lightly salted tortilla chips
1 can chopped tomatoes
3 garlic cloves
Tomato puree
1 packet of chili spice mix for chili con carne
1 small can of kidney beans
1 red pepper
2 bay leaves
2 small red onions
2 avocados
1 medium tomato
1 lime
Handful of fresh coriander
Jalepenos
Vegan cheese
Sour cream
 Salt

For the guacamole:

Add 2 large avocados, 2 garlic cloves, 1 tomato, 1/2 red onion, and coriander to a blender. Give a quick blend, then add some salt and lime juice from 1 whole lime, and blend again (Tip: for keeping guacamole fresh in the fridge, keep a stone from an avocado with the mix). Add some water if it seems a bit dry!




For the veggie con carne:

Heat olive oil in a pan to medium-hot heat. Add 1 finely chopped garlic clove, 1 finely chopped red onion, and 1 finely chopped pepper. Cook for 2 minutes, add tomato puree and coat everything with it.

Add spice mix, give a quick thorough stir and add can of chopped tomatoes and bay leaves for a bit of depth. Add a pinch of salt, and let simmer for about 6 minutes.

A few minutes before serving, add in the kidney beans, so as they get warmed through.




Assemble!

Sooo easy. Add in the following order:

Tortilla chips (make a hole in the middle)
Veggie con carne
Guacamole
Sour creme
Jalapenos
Grated cheddar cheese
Throw your construction in the microwave (I say throw, please gently place instead) until the cheese starts to melt. Awesome! Great for with friends, also good to keep for the next day for party weekends!

Throw a wee bit of sexy garnish on the top to look pro.
