So called because of its use of cider. Very easy recipe!

Suitable for vegetarians.

Serves 3 - 4.

You need:

25g butter
1 large onion, finely sliced
1 clove garlic, finely chopped
750g mushrooms, quartered
250ml decent cider
200ml double cream
Pinch dried thyme
Salt and pepper
Rice or pasta to serve

Melt butter in large saucepan over medium heat.

Add onions and garlic and cook for around 10 mins until softened but not coloured.

Add mshrooms and cook for further 10-15 mins until they have shrunk in size.

Add cider, cream and thyme, and season with salt and pepper.

Allow to cook for another 20 minutes until the sauce has thickened.
