TEATIME COLLECTIVE'S VEGAN MERINGUE WIZARDRY

This is a yummy recipe for a sweet, delicious, vegan meringue which you can use in pavlova or lemon meringue or anything you want really! It's also a great way to use that water from chickpeas which is usually thrown away!





You need:

Water from can of chickpeas
1/2 cup of sugar
Small pinch of salt (optional)
1/2 tsp vanilla extract (optional)


Add the sugar to the chickpea water. Whisk until you get stable peaks in your mixture, which look like this and don't 'melt' into a flat liquid:



Place in baking tray on grease-proof paper, bake on a low heat for 2 hours until solid. You only want some slight browning, if any. If it starts browning, it is definitely cooked!
