This recipe is courtesy of Cafren from Teatime Collective, an awesome little vegan cafe in Manchester that also do orders for wholesale, private catering, and more! Check out their website here.

This is a yummy recipe for a sweet, delicious, vegan meringue which you can use in pavlova or lemon meringue or anything you want really! It's also a great way to use that water from chickpeas which is usually thrown away!

You need:

Water from can of chickpeas
1/2 cup of sugar
Small pinch of salt (optional)
1/2 tsp vanilla extract (optional)

Add the sugar to the chickpea water. Whisk until you get stable peaks in your mixture, which look like this and don't 'melt' into a flat liquid:

Place in baking tray on grease-proof paper, bake on a low heat for 2 hours until solid. You only want some slight browning, if any. If it starts browning, it is definitely cooked!

And that's all there is to it!!

-Thanks again to Cafren from the Teatime Collective, make sure to check them out!!
