An awesome vegan alternative to sour cream!

Makes about 1 1/4 cups

You need:

1 cup raw cashews
2 tsp cider vinegar
1 tsp lemon juice
1/2 tsp salt
1/2 clove garlic
1 bunch of chives
Place cashews in a cup or small bowl and cover by about 1/2 inch with boiling water. Let soak for around 30 minutes.

While you are waiting, finely chop up your garlic and chives. A lot of vegan sour cream recipes don't have this, but I feel it adds a lot to the flavour.

Drain the cashews and place them in a blender with the vinegar, lemon, salt, garlic, chives, and about 1/4 cup water. Blend until smooth, adding more water as required to create your desired texture.
